Name of Recipe: Christmas Casserole

The story behind the recipe: This breakfast casserole could be made the night before so all you had to do was stick it in the oven the next morning and voila, no fuss main breakfast dish. The breakfast was the casserole, blueberry mufins, and home fries. Christmas morning with chuildren is always hectic and anything to make it easier worked. The children were allowed to get up at whatever time they wanted and could open their stockings without the adults there. No presents from under the tree were to be opened until adults were up. The first thing done was to put the casserole in. Then on to the tree. The oldest child distributed the presents one at a time to each person. Everyone opened that one gift, showed it to everyone and thanked the person who gave it to them. This continued one at a time until everything was handed out. The casserole bakes for long enough that it gives you time to be there with the presents. Then everyone had to go get dressed for the day and come down for breakfast. That provided enough time to get the potatoes reheated(again made the night before) and put the muffins in the oven. The only time we had the casserole and blueberry muffins was Christmas morning so it was a once a year meal and was special because it was only served on Christmas morning.
